In a 6-quart Dutch oven, bring water and salt to a boil. Slowly add grits, stirring constantly. Reduce heat to low; stir in garlic. Cover and simmer 5-7 minutes, stirring occasionally. Remove grits from heat; stir in cooked sausage and cheese; serve hot.
